Blue Potato and Fir Winter Soup
Ingredients
375 ml (1½ cup) chopped onion
2 large blue sweet potatoes
1 small turnip
60 ml (1⁄4 cup) sunflower oil
125 ml (1⁄2 cup) celery
1 l (4 cups) vegetable broth
2 tablespoons fir powder
1 tablespoon mustard
1 tablespoon miso
2 garlic cloves
125 ml (1⁄2 cup) barley
1 tablespoon salt
Preparation
In a large cooking pot, heat the oil. Chop and brown the onions. Chop the other vegetables in small cubes and add in the pot.Blend and let cook a few minutes.
Add the barley, vegetable broth, mustard, miso, fir powder and salt. Let simmer for 20 minutes.
Serve with a bit of fresh cream.
