Blue Potato and Fir Winter Soup

Ingredients

  • 375 ml (1½ cup) chopped onion

  • 2 large blue sweet potatoes

  • 1 small turnip

  • 60 ml (1⁄4 cup) sunflower oil

  • 125 ml (1⁄2 cup) celery

  • 1 l (4 cups) vegetable broth

  • 2 tablespoons fir powder

  • 1 tablespoon mustard

  • 1 tablespoon miso

  • 2 garlic cloves

  • 125 ml (1⁄2 cup) barley

  • 1 tablespoon salt

 

Preparation

In a large cooking pot, heat the oil. Chop and brown the onions. Chop the other vegetables in small cubes and add in the pot.Blend and let cook a few minutes.

Add the barley, vegetable broth, mustard, miso, fir powder and salt. Let simmer for 20 minutes.

Serve with a bit of fresh cream.
