Fir Flavored Root Vegetables
Ingredients
1 large parsnip
1 sweet potato
1 blue sweet potato
1 onion
1 large carrot
3 potatoes
1 beet
2 rosemary sprigs
2 chili peppers
60 ml (1⁄4 cup) tamari
75 ml (1⁄3 cup) sunflower oil
3 tablespoons apple cider vinegar
60 ml (1/4 cup) fir honey
2 teaspoon salt
2 teaspoon pepper
Preparation
Preheat the oven to 350°F.
Except for the potatoes, cut all vegetables in 2 cm x 4 cm sticks. Slice, but not entirely, the potatoes every ½ cm. Slice only the top part so that the base remain in one piece and hold the potato together.
Put all vegetables and all remaining ingredients in a large bowl and mix thoroughly. Place on a baking tray previously covered with parchment paper.
Bake for 40 minutes until vegetables turn golden brown.
Right out of the oven, pour 1 or 2 spoonful of fir honey on the vegetables.
